Take care to keep all the leaves attached to the base when you’re preparing the cabbage. And even though they’re a little more expensive, it’s worth seeking out real smoked almonds rather than smoke-flavoured ones. The light smoky flavour works so well with the cherries; it’s a total treat.
Make the dressing by whisking the oil, vinegar, maple syrup and mustard together, then stir in the almonds and cherries. Set aside and let the cherries swell a bit in the dressing.
Bring a large pan of salted water to the boil. Cut the cabbages lengthwise into quarters and blanche them for 1 to 2 minutes, then drain.
